Des études ont commencé en 2018 pour installer une « truffière pilote » en Côte d’Or. Plusieurs sites avaient été présélectionnés dans le département pour ce projet, mais c’est finalement la commune d’Is-sur-Tille qui a été retenue. La truffière pilote est aujourd’hui installée sur la plaine des jeux à Is-sur-Tille. C’est un site où des animations sont organisées pour les professionnels mais aussi pour faire découvrir au grand public les vertus de ce champignon bien particulier représentatif de la gastronomie bourguignonne. Pour parler de cette truffière pilote, mais aussi de la truffe en général et des conséquences du dérèglement climatique sur la production de ce champignon, nous avons reçu Gwladys Uguen, animatrice de la charte forestière du pays Seine et Tille et Christine Dupaty, présidente de l’association truffe Côte d’Orienne.
