Before highways and Route 66, America’s travelers relied on trains—and Fred Harvey turned those stops into culinary destinations. In the 1870s, he partnered with the Santa Fe Railway to open Harvey Houses, staffed by disciplined “Harvey Girls” trained to serve meals in under 30 minutes. At their peak, 80 houses dotted the country, 13 in New Mexico. The Belen Harvey House, once a bustling dining hub until 1939, survived the decline of rail travel by serving troops, workers, and later as a community center and museum. In 2013, it became a full museum with a cafe serving nostalgic comfort food—turning history into a sensory experience and funding its own preservation.
