Multi award winning baker Brian from Baker Boy Cakes stops by to speak to Laura Redhead Benson in dept about Wedding Cakes. First and foremost Baker Boy Cakes confirms taste over design is always the priority. That said no design is off limits for this Cake Designer of the Year. Brian tells us of some of the more extreme designs such as melting cakes, swing cakes, up-side-down cakes. The more traditional designed buttercream icing, naked cake, chocolate shell, fondant icing and more are discussed. The hours and intricate detail that goes into the designs of cakes, be it handmade flowers or custom requests give you an appreciation into the craft. Cutting the cake is one of the biggest wedding traditions. When you plan on serving the cake can be impacted by what type of cake it is as well as when you think guests will best enjoy the cake. Brian and Laura chat about how they have seen cakes cut the afternoon of a wedding day, that evening or even the day after a wedding, on the second day of celebrations. The amount or size of cake is delved into with regard to having enough cake and reducing waste. It is very easy to go too big and Brian gives a guide on the portions that realistically are used. Still allowing you to have the big wow factor of a tiered cake, dumpy or filler tiers can be used to add height to your wedding cake. A shell of a tier that is iced and decorated to match your entire cake. The cost of cakes are rationalized with the break down of communication with wedding couples, meetings, samples, design, preparation, baking, delivery and setup. Laura and Brian additionally get into the decorations around the cake that can add that bit extra to the cake design. As well as reminding wedding couples of the impact the room the cake will be displayed at the wedding venue will have on the cake aesthetically. Cake Toppers and the various options from clay models to 2D wording are touch upon. Allergies with regard to cakes are discussed, gluten, nuts, even honey or raspberry. Laura of course chats on methods to research cake makers as well as getting some interesting stories out of Brian on being the only male in a Home Economics class starting out as a budding baker.
