What to do if parents don't approve your relationship?

How do you deal with the situation when you are in love with someone but yours and/or your partner's parents don't approve? How to deal with the parents not liking your boyfriend/girlfriend based on cultural, religious, racial, or social differences? Are there any peaceful ways to open parents' minds? What if parents may have a very legitimate reason for disliking their child’s choice?
