Saute onion and garlic in oil until onion is translucent. Add cabbage, meat, and sauerkraut. Add tomato juice, then three more 12-ounce measures of water. Heat to boiling, then lower to a simmer. Cover pot and check on it occasionally to make sure you don't need to top up with water (as cabbage cooks down, this won't be a problem). Once cabbage has cooked down, stir every half hour or so. Notes: Sour cream on top is divine, and it goes well with pierogi. Left-overs are better the next day because the flavors continue to marinade.
