Stuffed Italian Zucchini Boats with Italian Sausage Preparation Time: 20 minutes  Cooking Time: 35 minutes Ingredients: 4 medium zucchini 1 lb. Italian sausage 1 large onion, chopped 3 cloves garlic, minced 1 can (15 oz) diced tomatoes 1 teaspoon dried basil 1 teaspoon dried oregano Salt and pepper, to taste 2 cups mozzarella cheese, shredded 1/4 cup Parmesan cheese, grated 2 tablespoons olive oil Directions: Preheat your oven to 375°F and lightly grease a baking sheet or dish. Cut each zucchini in half lengthwise and use a spoon or melon baller to hollow out the centers, leaving about a 1/4 inch thick zucchini "boat". Place the zucchini on the baking sheet. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook until browned and no longer pink, breaking it up with a wooden spoon as it cooks. Remove the sausage from the skillet and set it aside. In the same skillet, add the chopped onion and minced garlic, cooking until the onion is translucent. Add the diced tomatoes, basil, oregano, and a pinch of salt and pepper. Stir well and cook for a few more minutes. Add back the sausage and cook for another 2-3 minutes until everything is well combined. Spoon the sausage mixture into each zucchini boat, pressing it down and filling to the top. Top each zucchini boat with a generous amount of mozzarella and Parmesan cheese. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
