Gingerbread: Simple and Delicious

When you hear the word gingerbread what happens?

Does your mouth water? Can you taste and smell the sweet, spicy notes of molasses, ginger and cinnamon?

You also might be thinking of the gingerbread house that’s glued together with icing and decorated with candies.

Did you know that the largest gingerbread house was built in Texas?

That’s right. It was the Traditions Club in Bryan, Texas that built a gingerbread house 60 feet long, 42 feet wide, and 10 feet tall.

This gargantuan project used 3,000 pounds of brown sugar, 7,200 eggs, 7,200 pounds of flour, and 1,800 pounds of butter.

 

Not Just For The Holidays

Gingerbread is the quickbread most often thought of at the holidays.

But It’s enjoyment isn’t limited to the tree-trimming, carol-singing time of the year, but one thing’s for certain though.

No candle can hold a match to the beautiful aroma of this delicious cake-bread in your own oven.

And if you grew up with a grandmother or mother who baked, or if you bake yourself, just talking about gingerbread will evoke some warm feelings to match those warm memories of that aroma.

What I love most about gingerbread is its simplicity.

Flour, butter, molasses, ginger, and cinnamon. It’s texture is light and its taste delightful.

You’ll only need a handful of each of these ingredients, not the truckloads used for the Bryan, Texas house.

And it does come with a guarantee of pure comfort.

If you never tried your hand at baking this delicious treat, today is the day.

It’s an alluring and simple dessert to finish off a home-cooked meal.

And its simplicity would be simply delightful as a sweet ending for a meal with guests.

Top off your gingerbread with a dollop of whipped cream or a slight sprinkle of powdered sugar.

Whatever the occasion, whatever the time of year this quickbread will make you want to stand up and do a little dance.

Gingerbread: Simple and Delicious

Whatever the occasion, this gingerbread cake will make you want to do a little dance. Pull it together in minutes and enjoy it any time of the year.

Ingredients

  • 1 1/2 cups flour
  • 1 egg
  • 1/2 cup unsulphured molasses
  • 1/2 cup butter, softened + a bit more to butter your baking dish.
  • 1/2 cup water
  • 1/4 cup packed brown sugar
  • 3/4 teaspoon cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Instructions

  1. Heat oven to 350˚ F.
  2. Butter and flour an 8x8x2 baking dish, and set aside.
  3. In a mixing bowl, whisk together flour, brown sugar, cinnamon, ginger, baking powder, and baking soda.
  4. Add the egg, molasses, butter, and water to the mixing bowl.
  5. Mix on low speed until combined.
  6. Beat on high speed for 2 minutes.
  7. Pour into the prepared baking dish.
  8. Bake for 35-40 minutes.
  9. Cool and cut for serving.
  10. Garnish with powdered sugar or a dollop of whipped cream.
