Champagne is always a good idea and in this episode I get into the traditional way of making champagne. This method originated in the French region Champagne and is one of the most popular methods to make sparkling wine. It is considered the classic and highest quality method for producing sparkling wine.   The key feature that makes this process so unique is that the wine undergoes a second fermentation in the bottle. Usually champagne producers blend different grape varietals to create a consistent style based off of what type of sparkling wine they want to create. Champagne is usually classified based on the amount of sugar added after second fermentation.   Today's sparkling wine is a Brut that consists of a blend of Chenin Blanc, Chardonnay and Cabernet Franc. Brut is the most popular and most consumed style of champagne.
