Julia Child once said, “In department stores, so much kitchen equipment is bought indiscrimately by people who just come in for men’s underwear.”   Be A Discriminating Buyer of Kitchen Equipment Last week I started my list of Top 10 Kitchen Tools For Weeknight Cooking.  Here’s a quick review: Number 10.  Fish spatula. Number 9.  Box grater. Number 8.  Silicon spatula. Number 7.  Tongs. Number 6.  Microplane zester. Here’s the remaining list: Number 5.  Citrus juicer.  This is that handy device that effortlessly squeezes the juice from lemons, limes, and oranges.  Nothing adds a pop of flavor to a sauce like a squeeze of fresh lemon.  And for the quickest, tastiest salad dressing ever, simply drizzle olive oil over your greens followed by a squeeze of lemon juice. Number 4.  Bench scraper:  For scooping up items that need to be transferred from a cutting board to a pot, a skillet, or a bowl.  It’s also used to split and scrape up dough.  It’s indispensable. Number 3.  Cutting Board.  Use a wooden or bamboo cutting board.  It’s the best surface for you knife and it’s naturally antimicrobial.  Unlike, plastic cutting boards that harbor more bacteria especially in the crevices created by your knife. Number 2:  Honing Steel.  This is the long steel tool in your knife block that puzzles most people.  Use it to hone your knife, that is correct small changes that occur in the blade of your knife as you cut.  Hone your knife before every use.   The Number One Tool You Need In Your Kitchen Is A Chef’s Knife Number 1.  Chef’s knife.  The blade of a chef’s knife is 8”-10” long and 1 1/2” in width.  This is the workhorse knife in the kitchen to chop, slice, mince, and trim.  Chef Masaharu Morimoto has said, “A kitchen without a knife is not a kitchen.”  Invest in a chef’s knife.
