Number 2:  Honing Steel.  This is the long steel tool in your knife block that puzzles most people.  Use it to hone your knife, that is correct small changes that occur in the blade of your knife as you cut.  Hone your knife before every use.   The Number One Tool You Need In Your Kitchen Is A Chef’s Knife Number 1.  Chef’s knife.  The blade of a chef’s knife is 8”-10” long and 1 1/2” in width.  This is the workhorse knife in the kitchen to chop, slice, mince, and trim.  Chef Masaharu Morimoto has said, “A kitchen without a knife is not a kitchen.”  Invest in a chef’s knife.
