Welcome to episode one of Behind the Machine, where I get to know your favorite baristas! I am on a machine to find their favorite drink and their best tips and tricks. We all know what a wild and unpredictable industry hospitality is, so what keeps them so passionate in what they do? Today I’m sitting down with local barista, front of house supervisor, and coffee enthusist Laura Derly. Laura started in the hospitality industry about sixteen years ago. She learnt to make coffee while living in the United Kingdom, she has also worked in kitchens and bars in France, as well as Australia and other parts of the world. Her experiences in multiple cafe scenes has taught her a lot. Despite having such vast experience with travel, Laura has settled down in Adeliade, working locally at the Banksia Tree in Port Adelaide. I have worked with Laura for the past year and can contest to her incredible skills on the machine. As someone who has been in the industry for such a long time, she is full of tips on how to get started. Her passion is unmatched.
