    Toni Patisserie Stage and yard troubles

    Completed my first stage at Toni Patisserie out in Hinsdale, IL! suggest anyone local head out there and give it a shot. Also new starbucks seasonal drinks loved one, will not ever try the other ever again. The whoa of springtime hits, yard work, starting an edible garden and seeing the damage winter has done. Erosion and sink hole worries.

    Leaking roofs, French Chefs, and quarter practical number 2

    In this episode hear one of the down sides of a owning a 100 year old Dutch colonial style home (the roof is apparent prone to leaking) Talk about the cooking portion of Nutrition with chef Checci, and our Professional development week. Also wandering around Chicago looking for interesting fine dining places to stage.

    Nutrtional cooking starts... not alot going on

    This is a quick episode. We have had a big month sorry for the delay. Phil was in a car accident, and then other things happened. But this episode covers the nutrtional cooking class, however not the cooking portion. a little tour of Chicago bakeries close to the school and moderate disappointment in what i found. Paris Baguette is still my favorite at this point for actual patisseries.

    The Lull Continued

    Got one more week of no kitchen class, can't talk about work much, and didn't make anything at that point. So instead I went to Oak Park, Il where there is a nice variety of bakeries. So many that I can probably make another twenty episode covering more of them. This visit I went to Courageous, Sugar Fixe Patisserie, and Broken Tart.

    The Lull

    Short episode, just not much happening. Didn't really eat anywhere cool or new or specifically local. Didn't have any ultra cool desserts made by someone else. I made 2 things discussed in episode Blood Orange Ginger and Rosemary tart, and a little super chocolaty hibiscus and pomegranate entreme. all good but not great. Also I missed it but it was theater week in Chicago, I missed it but the dates in the episode image are about the same year to year. so for anyone interested save it in your calendar! some theaters are discounted through those dates, as are some restaurants.

    Pastry techinque Practical

    Its time for the final for our Pastry Technique class. Learn how we got graded some what. From Final product, taste and appearance, team work, cleanliness all the way to using your own stuff and safety. Also forgive the slight rambling, its been a sleepless week! Also it was Restaurant week in Chicago, so we had a celebratory lunch at the Gage on Michigan Ave. This week was Theater week, but we will be missing out on that one.For interested Parties below is the link for the Gagethegagechicago.com

    Quarter 2 has started! Pastry Technique with Chef Heidi, speech and over achieving top rated public high school

    So the new quarter has started, Pastry Techniques as started, Great class for the most part except for 2 things. Below is a link for a newspaper article about Chef Heidi! Speech Class, which who knew a podcaster may hate a speech class... Also getting a 14 year old ready to make big life choices when he barely knows what he wants to do.     English Comp 1,, Pastry Science with Chef Tom Beckman

    Hi everyone Episode 3 is here! the last pre Disney post, scheduled to come out Monday the 6th. next episode may be the 20th as we strive to get back into the swing with school. This episode is all about English class, and pastry science. may post some bonus content like the microphone picking up my stomach growling in a different recording. Also may include my cut rant on why colleges should structure English comp classes to emphasize the importance of English composition vs how they are structuring it to be some what emotional.picture used is the pastry science text book! there are free links to it elsewhere, great book to understand how baking works! May I also suggest purchasing this book. When we have some extra cash, i do plan on purchasing a hard copy. Better sound quality still have some weird glitchy noises.     Finding Home

    Episode 2 is here! sorry for the sound quality again, for whatever reason no matter what i did there is some weird distortion through out. hopefully next episode will be better. This episode is about the actual buying and selling of houses looking for houses in the suburbs, also a little on Kendall's orientation. Constructive criticisms always welcome.

    Welcome to Episode 1! In this episode its the introduction to me! Some of the financial realities of going to pastry school and possible career earnings after, mostly just an introduction episode. Sorry for some of the noise issues this is a very bare minimum set up at the moment, any helpful hints or constructive criticisms welcome! Yes I do swear, However, it wouldn't be what i'd call explicit.
