    Wilderness Brewing

    For this episode we speak to James & Helen of Wilderness Brewing, out of Welshpool, mid Wales. Like many of the best stories of people who start breweries or are producers of mixed ferm beers, it’s one of quite simple necessity and a love for the physical job at hand. This is how James came to start Wilderness Brewing, and as it grew he needed help along the way. In comes Helen to help guide the passion and vision. We sit and chat at Little Earth Fest 2024, covering all the areas that make James & Helen want to do what they do, ingredients, people, processes, art, and raising awareness of causes close to their hearts.     Scatterlings Beer - Brett Moore

    From Beavertown to the Barrel Project in Bermondsey, then on to being the head brewer at Two Flints, Brett uses all that experience in his Scatterlings mixed ferm beers. We talk European beer history, those Beavertown parties at the brewery, the joy of 750mls, some of his favourite UK mixed ferm producers, and a little insight on those wanting to try producing mixed ferm beers at home.     Holy Goat Brewing

    For many, the idea of a ‘mixed ferm’ brewery might be a farm, with quaint barns, all beer fermented in barrels, with bottles featuring delicate artwork from pieces of nature. This will be correct for some producers, but there are ones that don’t quite fit that image, particularly when it comes to bottle artwork.In this second part of the two chats I recorded from a very busy London Craft Beer Festival in August 2023, it features a brewery with a really interesting story of how they came to be, where they went via, and what drives them forwards today.Welcome Jonny, from Holy Goat Brewing of Dundee, Scotland.

    Pastore Brewing & Blending

    In this episode I talk to Chris from Pastore Brewing & Blending of Waterbeach, just north of Cambridge, in the East of England. They produce wonderful core beers based on a classic European style, alongside more complicated beers, aged in barrels that might have fruit or even grape skins added. We discuss where it all started, and about some of the processes they use to produce their mixed ferm beers, the breweries influence and knowledge of historical European beer styles, and how they balance production of their different beers. Along with brewing these styles as homebrew. Enjoy!

    Little Earth Fest 2023

    Welcome to Quiet House. This first episode features chats with guests at Little Earth Fest 2023. We speak to Laura from Funk Dungeon, James and Will from Balance Brewing, and Jonny from Mills Brewing.  Each of the guests give us an insight to their brewery, and we cover subjects like why they chose to produce mixed ferm beer, using UK ingredients, whether community and being local is important, and if their beer has a sense of place.
