Episode 50: Expanding and Espresso pudding
This week‘s episode is about expanding. Listen for some exciting new news about the expanding podcast and just other things I’m excited to tell you about. The recipe today came from my own head from the ingredients that I had in my pantry and just because I wanted a special little snack to celebrate. Enjoy!Espresso pudding Vanilla pudding Instant coffee- a tablespoon Cocoa powder - a tablespoon MilkSeparate prepared pudding mix into different bowls and stir coffee into one and cocoa into the other. Layer chocolate then coffee pudding mix and top with whipped cream. Since I made this with the ingredients I had this is what I came up with. If I were to do this again I would buy a separate chocolate pudding mix and just have that prepared. Put that in the refrigerator , let that solidify and then make the vanilla with the espresso later and add that on top.

Today’s episode is on the urge to purge. After doing a massive amount of organizing, purging, and cleaning I felt like I needed a reward! The recipe is one that I kinda came up with. Two apples1 stick of butter About 1/2 cup brown sugar CinnamonVanilla One box yellow cake mix (and the ingredients needed to make it)Melt the butter and then mix in sugar, a dash of vanilla and cinnamon. Put this on the bottom of a well sprayed spring form pan (9 in). Thinly slice the apples and place on top of the caramel. Mix up the yellow cake mix according to the instructions and pour on top of the apples. Bake 350 for 30 minutes.

It’s difficult but here’s a recipe to help us work it out. Recipe from my GrandmaPistachio Cake1 boxed yellow cake mix 3 boxes instant pistachio pudding mix1/2 cup vegetable oil 1 cup water 4 eggs Whisk all together until smooth. I like to use a Bundt pan for this cake. It makes it pretty. Bake at 350 for 1 hour. After it’s cool dust with powdered sugar for a festive look! And when you cut into it… the green color is perfect!!!

I realize that disappointment is like my Achilles heel. It’s my hardest emotion to deal with. Comfort biscuits seemed like the way to go. I don’t know where I found the recipe but it’s an easy one and very adaptable. Episode 31: Abandonment and Apple Berry Pie
Have you ever felt abandoned? Yeah me too. It’s not a good feeling especially if it keeps happening. Today I dive into this deep topic and bake it out with some pie. The crust recipe is simple and can be halved:1 stick butter crisco shortening 3 cups flour1 1/2 tsps salt2/3 cup cold water The filling I just diced up 3 apples and cooked over low heat with a frozen berry blend. I added about 1/2 cup sugar, about a tablespoon of lemon juice, a tsp of cinnamon and 2 tablespoons butter. To make the mixture come together I added a cornstarch/water slurry (maybe 1/4 cup of each) to the pot and slow cooked until it was reduced. Crumb topping is just butter, flour, cinnamon and sugar blended.Baked at 375 and it was yummy! Hebrews 13:5

You’ll notice that I try to make the cake striped and I think it worked a little bit. I didn’t get a picture of it turning out, but it does look striped. You can substitute eggs on your box mixed recipe, just by doing a quarter of a cup of applesauce per egg .
