How Do You Like Your Eggs?

Although the service industry is the primary economic engine of New Orleans, the stories of these professionals are largely untold. How Do You Like Your Eggs? is a series of unstructured interviews and dialogues with service industry professionals hosted by local chefs and producers, Jake Lewis and Anna Gowin. The series aims to provide a voice for this group and expose a behind the scenes look into the daily lives of the service industry.

    Neil Gernon invited the gang out for a sleep over and wine guzzling on the bucolical and alcoholical grounds of the Wild Bush Farm & Vineyard. There’s usually music, and our visit was no exception. Neil likes his eggs just like Lorenzo! No surprise really for two old buds. This is our season finale, and the most self-indulgent episode of Eggs? yet. Whatever, I don’t wanna hear it. We earned it. Catch!

He’s got a lot to report about the local protest scene, and the sad news that the rights of the gimme-a-haircut crowd aren’t really being infringed, that crowd just isn’t thinking about it creatively. Or, let’s face it, at all.

    Lacey Ellinwood is a librarian, an ex-service industry professional (like anybody who has two degrees), and the oldest broad ever to be in a punk band. She might not know a lot about anything, but she knows a little about everything, which sort of makes her an analog Google. I mean, a librarian.  She also likes her eggs over medium, but she won’t get them that way from us in the time of COVID. Sorry. We talk about Katrina, Corona, Prague and Pedals. Come and get it!

    ALEX SILER

    Alex is a long time service industry professional and New Orleanian ex-pat living in Seattle. He’s weathering the pandemic nicely right now thanks to the fact that he knows the value of a dollar. More specifically, because he knows how much fifteen dollars an hour for a front of house employee is worth. Get ready for some initial scuttlebutt about bird rape. You have been warned.

    BOBBY LINN

    Bobby Linn’s been a translator and interrogator in the American army in Korea, a rice and soybean farmer, a principle of a school, and our grandfather. He’s inconvenienced by the corona virus pandemic, but undeterred by his disabled veteran status. You don’t hear much about it in this episode, but the man eats a lot of eggs, too. And he hates maggots.

    The Wellness Director for the Broadmoore Improvement Association joins Asher Griffith today, all alone and by himself. He cuts his teeth on interviewing, and she effortlessly (and perhaps unwittingly) adds to the format of the show! There's a lot about stoicism, and there's a lot about maggots, but there's a LOT about what your neighborhood can do for you, and what you can do for your neighborhood.

    “Make all you can; can all you make,” I once heard a pastor quip during a sermon. That was never better advice than when it comes to food security. Cuz what’s the best way to eliminate food waste? Eat it, of course! But first, give it to No Hunger NOLA’s Alyssa Hernandez and Matt Holland who will make it into a pickle or some jam. We may have had Matt talking into the back of the microphone, but that didn’t stop us from noticing he had a great voice for radio. Miraculously, he’s also the first guest to make that joke. Yeah, that joke. Get ready for ASMR and a profound absence of Jake. Bon appetite!
