So, mymother’s culinary creativity always came to therescue in preparing some terrific meals that didn’trely on meat as the main ingredient. This is oneof mom’s famous recipes and one that my brotherTom has guarded, due to it being his absolutefavorite meal.1 whole onion, chopped1 whole pepper, chopped11⁄2 sticks butter18 ounces tomato paste1 to 2 pounds spaghettiSaute onions and pepper in pan with a little waterand a little butter until the onions become transpar-ent. Add tomato paste and one stick butter. Stirand cook until tomato paste becomes thinner. Addthe remaining 1⁄2 stick butter into the cause afterthe first one has melted.Cook spaghetti and drain.To combine: Put a third of spaghetti back intothe pot (You can use the same pot you boiled thespaghetti in — just give it a quick rinse). Then, adda third of sauce. Repeat this two more times. Stir itall up and there you have it!Don’t let the simple ingredients fool you. This is anoutstanding meal! It’s easy to make and tastes great.You’ll find yourself going for third helpings. You canrefrigerate the leftovers (if any is left). But be careful!Friday Spaghetti lovers have been known to raidthe refrigerator late at night and eat this dish cold(it’s that good).
