Annette recommends using mineral-rich salt and avoiding refined salt with fillers or additives. How to Make Fermented Cucumbers Start with clean cucumbers and a clean jar. Add bay leaves to help keep the cucumbers crisp, then add flavor with garlic, dill, onion, celery seed, mustard seed, or peppercorns. Keep the cucumbers fully under the brine so they can ferment properly without oxygen. Let the Fermentation Work The cucumbers can sit on the counter for several days as the fermentation process begins. Annette explains that the jar should be burped daily if using a regular lid, and the cucumbers should stay below the water level to prevent spoilage.
