Martin Bucknavage is Penn State’s Senior Food Safety Extension Associate, providing training and technical support to food manufacturing and foodservice companies, as well as consumer groups in the areas of food safety, food processing, and quality management. He has a wide range of experience including low acid, acidified, and high acid food processing, Listeria control in food operations, environmental testing and sampling, food spoilage and shelf-life determination, development and implementation of food quality and safety systems including HACCP-based controls, food standards including the Food Code for food service and retail operations, and operational process analysis and improvement.
