In questo episodio ho avuto il piacere di intervistare Caterina Cardia, forager, raccoglitrice e coltivatrice di piante spontanee commestibili e di ortaggi antichi in Val d'Orcia. Lavora e collabora per l'azienda agricola e per il ristorante "La Buca Vecchia" a Montepulciano. Caterina ci racconterà come e perché fa questo lavoro. Dalle prime raccolte in Val d'Orcia fino a quelle vicino a Firenze, dalla collaborazione con lo chef Fabio Picchi fino al lavoro all'azienda La Buca Vecchia. Ci parlerà di alcune piante spontanee che raccoglie e coltiva e ci consiglierà alcuni libri per avvicinarsi alle piante selvatiche da usare in cucina. Libri consigliati: "Le insalate di campo" di Bonelli - De Bellis - Nanni, Edizioni Effigi. "Phytoalimurgia pedemontana" di Oreste Mattirolo, Bruno Gallino e Giorgio Pallavicini, Blu Edizioni.
