189. Carlos Medeiros - The Silence & The Noise

Carlos Medeiros is a a twenty-nine year old Portuguese native trying to make some good things in different countries. He left home when he was twenty-one after opening a restaurant alongside his brother in law and friend. When Carlos realized he was in way over his depth, he knew it was time to leave for the unknown. Carlos booked a ticket, packed his bags, borrowed 2000£ and left the country to go to the UK. His original plan was to stay in the UK for one year and then move to Australia. However, his trip to Australia never happened. Since moving to the UK Carlos has been working in Michelin star restaurants in Britain, Holland and now Norway. Apart from cooking Carlos has two other passions, his girlfriend and jiu jitsu.
