299. Paul Svensson - on the hunt for taste, the love for variety and making food with the land.

Paul Svensson (LI) came by the podcast and we spoke about how the hunt for flavour turned into a passion for regenerative farming and soil creation. We spoke of the transition from seeing difference as a problem to seeing it as an opportunity. We spoke of how good soil is the precondition for good food. How an obsession of data revealed how he (and we all) need to really fundamentally rethink how we eat and grow our food. Paul is on a mission to educate through letting people taste what regenerative tastes like.
