Scoop out the center seeds and discard. Coat with Edens Essential Olive Oil and bake at 425°F/218°C for 25 minutes or until acorn squash is fork tender. While that is baking, cook quinoa according to box directions using vegetable broth. Sauté vegetables in olive oil until crispy and cooked down. Combine quinoa and vegetables into a mixing bowl. Scoop mixture into acorn squash and cook for an additional 10 minutes. Enjoy!Pumpkin Coconut Milk Chia Pudding (2 servings)🍁 1 cup Coconut Milk🍁 1/4 cup Organic Chia Seeds🍁 1/2 cup Organic Pumpkin Puree🍁 1 tbsp Maple Syrup (can substitute honey or date syrup)🍁 1 tsp Pumpkin Spice Seasoning🍁 1 tsp Pure Vanilla ExtractDirections: Combine coconut milk, chia seeds, pumpkin puree, maple syrup, pumpkin spice seasoning and vanilla extract. Transfer to a blender and blend until mixture is creamy. You may have to stop and stir the sides to get all of the chia seeds. Transfer to bowl or jar, cover the top, and allow to chill in fridge for 4 hours or overnight.
