The restaurant is the perfect example of the state of Europe's dining scene which has evolved towards more casual, no-fuss upscale bistro serving more approachable food, compared to formal fine dining restaurants.  We discussed his background and Germany's amazing education program 'AUSBILDUNG'.  AUSBILDUNG is a form of apprenticeship where the student attends school and work simultaneously in order to gain both theoretical and practical knowledge at the same time.
