Known for:

  • Executive Chef - Akoko
  • Brand Ambassador - Krug
  • Former Head Chef - The Portland Restaurant (one Michelin star)
  • Former Head Chef - Bonhams Restaurant (one Michelin star)

The Big 5 Questions:

  1. How do you measure the impact of what you do?
  2. How should people/businesses be preparing for the future?
  3. How do we build the workforce we need for that future?
  4. How do you use creativity to solve problems?
  5. How do you collaborate?

Key quotes:

"It was twelve, thirteen years of climbing the ladder. Starting at the bottom every time."

"I think every restaurant has little photos of all the critics in the cloakroom somewhere, that you see before you go into the kitchen every morning."

"My friends who are now at Head Chef level - we don't run our kitchens like they were run when we were junior. You've got to get the best out of people and screaming and shouting at them all the time is not the way to do it. You've got to build up their confidence, build up their skills. As clichéd as it is, you are only as good as your team."

"Brexit has decimated our industry and many industries, especially combined with Covid. People have gone home and can't come back."

"Trying to get the next generation in is the only way that we're going to be able to fix this, in the long term. But trying to entice them into an industry that's had some bad press before, all the long hours, it's tough. It takes a certain type of person to want to put the work in. I've done years of hundred hour weeks."

"Everyone spent a year at home and you couldn't go out. So people were cooking a lot more at home and becoming very good home cooks. I think that may be the death of the chains and the casual restaurants. Why would you go out and drop thirty quid when you can make a nice meal at home?"

The Grand Inquisitor (dramatic reading) Fyodor Dostoyevsky The Grand Inquisitor is a parable told by Ivan to Alyosha in Fyodor Dostoevsky's novel The Brothers Karamazov (1879–1880). Ivan and Alyosha are brothers; Ivan questions the possibility of a personal, benevolent God and Alyosha is a novice monk. The Grand Inquisitor is an important part of the novel and one of the best-known passages in modern literature because of its ideas about human nature and freedom, and because of its fundamental ambiguity. In the tale, Christ comes back to earth in Seville at the time of the Inquisition. He performs a number of miracles (echoing miracles from the Gospels). The people recognize him and adore him, but he is arrested by Inquisition leaders and sentenced to be burnt to death the next day. The Grand Inquisitor visits him in his cell to tell him that the Church no longer needs him. The main portion of the text is the Inquisitor explaining to Jesus why his return would interfere with the mission of the church. (Summary by Wikipedia)Ca Tales From the Citadel Miguel Angel Perez Garcia As Rick and Morty prepare to go to Atlantis, they're interrupted by a Rick and Morty pair looking for donations to the Citadel Redevelopment fund. Our Rick and Morty refute the possibility of donation with hostility, pointing out that our Rick was the one to destroy it in the first place, and the pair leave. Speaking of Souls Metropolitan Tabernacle The deeper things of life are so easily crowded out today. Here at the Metropolitan Tabernacle we cater for the needs of the soul. True fulfilment and happiness depends on knowing who we are, and knowing the Lord, our Creator. Don’t let yourself be swept away, programmed and ruled by the shallow things of materialism and hedonism. We need Him and one day we must give account to Him. We’ve presented a collection of material here to help you. Do investigate the facts of the Christian faith, and the possibility of walking with God.
