He shares his journey as an Indonesian Butcher.   Being a butcher meaning you are an expert in processing all types of meat, which also includes charcuterie (the art of preserving meat). A good butcher is a rare breed. Most young chefs didn't want to spend all day cutting and preparing meat, for other to cook. It is both refreshing, and exciting to see him exploring his passion.
