That's the razor clams dish referenced multiple times above; here's the piece Scott wrote for Morsel. My favorite fact about M.F.K. Fisher is that she was a gag writer for Bob Hope in the early 40s, no joke. (30:38) In 2012 I made a documentary about butchers called The Butcher's Karma; the part about Bartlett Durand and Black Earth Meats was this segment, The Zen Butcher.
