Chef Paul G was born and raised in the Bronx, New York City. He attended L’Academie de Cuisine in Washington DC and worked with many renowned chefs at reputable establishments like Congressional country club, and the historic Omni Shoreham Hotel. One of his favorite memories and honors is cooking for the White House Chef Henry Haller at his retirement celebration, who had served five presidents including Ronald Reagan.  After several hotel and restaurant chains like Brinker International and Marriott Hotels in different states, Paul found himself working as the Chef and Director of Food and beverage at the Forum in Dallas, a senior community that covers three city blocks 17 years ago.  In serving the senior community, Paul has grown to  have a wealth of knowledge in that area, from specializing in different diets. Paul understands many current senior health concerns and trends like memory care.  Paul is passionate about serving food of excellent and exquisite quality, bringing joy to people through their culinary experience. He continues to challenge himself to bring the best culinary experience to the residents at the Forum. Many of whom have travelled around the world and often remark that the food at The Forum is the best, which is what drew them there. He feels honored that families entrust him and his staff to serve their beloved parents and it is such a blessing to be a part of their lives.  Some of them are astronauts, pioneer flight attendants, world renowned surgeons, successful businessmen and community leaders that still hold regular meetings at their residence in their 90s. Paul grew up in an orthodox Jewish family and has many childhood stories. He loves sharing about growing up in New York City. Paul’s father, Saul, was a cab driver in the city who befriended Country Music legend Gene Autry. Saul would take Gene Autry to Madison Square Garden for his concert every year. Saul, was an urban cowboy while Paul’s, Millie was the sweetest 4 foot nine Jewish mother who had the personality that would light up every room she walks in. Paul is married to his wife, Elena, and has two amazing children in college, Matthew and Mollie.
