In Vietnamese cuisine, bánh mì is a short baguette with thin, crisp crust and a soft, airy texture. It is often split lengthwise and filled with savory ingredients like a hoagie and served as a meal. Passyunk Avenue lost one of the greatest Banh Mi makers this week; Andre Chin at Artisan Bakery. So today felt like an opportunity to remember a great chef and one of the dishes he loved so much.
