We’re living in a time that feels very divisive; adding this moment of pause and reflection into our daily practice is imperative. Show others what it looks like to listen and breathe; from this place of calm...

What’s for dinner? 

Roasted Red Cabbage/Brussel Sprouts/Sweet Potato and Tofu w/ Miso Butter Glaze

Ingredients:

Head red cabbage (chopped)
Brussel sprouts (halved) 
Diced sweet potatoes 
Tofu (cubed and marinated in garlic, ginger, coconut aminos)
2 tablespoons unsalted butter
2 tablespoons miso paste 
2 tablespoons maple syrup 
1 tablespoon coconut aminos or soy sauce 
1 tablespoon rice wine vinegar 

Instructions:

Preheat oven to 400 degrees. Marinate tofu, set aside. Line two cookie sheets with parchment paper. Chop cabbage, sprouts, and sweet potatoes. Add butter to a pot and melt, then add miso, maple syrup, soy sauce, and rice vinegar, stir. Combine cabbage and sprouts on one cookie sheet. Add sweet potatoes and tofu to the other. Coat both trays of veggies in miso butter. Bake until veggies are roasted and tofu is browned. Serve over rice. Enjoy! 

Simple Pot of Chai

Ingredients: 

2 1/2 cups of water
2 cups milk
4-5 teaspoons of loose leaf black tea or 4 tea bags 
10 green cardamom pods 
2 teaspoons peppercorns 
1 inch fresh ginger
6 whole cloves
2 cinnamon sticks  
2-3 tablespoons of white sugar (maple syrup, brown sugar, or honey can also be used) 

Instructions:

Add spices and water to a pot, bring to boil. Add tea and milk, simmer for 5 minutes. Strain spices and tea. Add sweetener. Enjoy!
