Roma tomatoes (about 6-8, seeded and diced)1/4 cup olive oil3 cloves garlic (minced)1/4 cup red onion Minced2-3 tsp. balsamic vinegar, chocolate infused1/2 cup fresh basil (torn)Himalayan SaltFreshly ground black pepper1 loaf French baguetteShredded Parmasean fresh basil Instructions:1. Combine ingredients in a medium bowl.2. Season generously with salt and pepper and let sit for at least 15 minutes.3. Meanwhile, cut baguette into half-inch slices and toast in the oven at 350 degrees for about 3-5 minutes, or until golden and crispy around the edges or on an indoor grill. Cool before serving.4. Place a spoonful of the tomato mixture on top of each baguette slice and top with fresh basil and a drizzle of balsamic with grated parmesan.
