Today on our episode #411 of All in the Industry, Shari Bayer's guest is Bo Bech, a Danish chef and restaurateur whose restaurant Bobe opened in late 2023 in an attractive townhouse in a cobbled city center square in Copenhagen. Shari visited shortly after its opening on her travels, and sat down with Bo for this conversation on a return trip to Copenhagen in Spring 2024.  Bo is not only a celebrated chef and owner, but author and TV personality, and a trailblazer of the Nordic culinary movement. He describes himself as a curious human being, who first made his name at Restaurant Paustian, where he earned a Michelin star, before setting up Geist in 2011 (Shari's solo dining experience on episode #161 from November 2017).  Working mostly with Nordic produce, Bo’s dishes are personal reflections of him as a chef, his background and his travels. Bo was also a guest on our show in April 2018, episode #174, which was recorded in person in Brooklyn while he was visiting NYC.
