If any one man is the foremost authority on Gumbo, it is Brett Anderson. Through two decades as a food writer in New Orleans, he has sampled more gumbos than most people will in a lifetime. And he's shared his knowledge with the masses: in 2004, he wrote: "Gumbo, Louisiana's Bowl of Wonder," a definitive guide to the state's signature dish. Some 15 years later, he wrote the coda to that story for the New York Times: "Gumbo, the Classic Louisiana Dish, is Dead. Long Live Gumbo," chronicling the new influences and ways chefs were putting their own touches on the dish.
