Carnivorist Chats Episode 13 "Eat Like A Human" with Dr. Bill Schindler

Hi folks, I decided to go back and do a little editing to this recording because I was so disappointed when Instagram rendered the original file and there was a delay where it sounded like I was talking over Dr. Bill for a lot of the chat. (that was not the case during the live itself). So I have edited some parts where that happened as well as made the video in landscape format and adjusted the audio a little. Hopefully this is a little better. Originally recorded on Instagram Live Sunday, February 12th 2023 Dr. Bill Schindler is an archeologist who has traveled to every corner of the globe to learn about our human roots. During his travels, Dr. Schindler has learned that our current industrialized food system is vastly different from what we have eaten as a species for millions of years. His much-anticipated book, Eat Like A Human, was published in 2021 where his goal is to help his readers find and prepare food that is as nutrient-dense as possible. Dr. Bill's current passion, the Eastern Shore Food Lab, was created in 2017 as a research and teaching laboratory at Washington College, has become an autonomous nonprofit. Dr. Schindler was instrumental in creating the lab and is continuing to direct the food lab and expand its programs. He left his position at Washington College, conducts research at ESFL and offers hands-on, immersive classes on a range of topics, including - cheese making, sourdough bread making, nose-to-tail butchering and cooking, fermenting, and foraging. It was an honor to talk with Dr. Bill about his book “Eat Like a Human” and discuss his thoughts around how we came to eat the foods we consume now versus how we did ancestrally.
