Nonfat dry milk is the unsung hero of the dairy industry. The product is added to cheese, yogurt, and many baked goods to boost protein content. But recent fluctuations in market price – along with a couple major salmonella contaminations at one of the nation’s largest manufacturing plants – is affecting the supply chain.
