Today's episode of VetChat by The Webinar Vet is the second of our bite-size content taken from the April 2021 WVA Virtual Seminar on Food Security. The seminar aimed to raise awareness and promote the veterinary role in achieving global food security through the establishment of relevant partnerships with other professionals, integrating veterinary expertise into current and future global food security programs and identifying possible workforce opportunities for veterinarians outside of clinical practice. This episode is a talk by Saskia Hendrickx from the University of Florida, on animal-source foods in food security. She talks about the threats to food security and the vulnerability of food insecurity. She goes into detail on the issue of stunting, how over 160 million children over the age of 5 are stunted in growth, and how this outcome of malnutrition can have an impact on the individual and the economy. Saskia then explains the importance of animal-source foods as high-quality, nutrient-rich foods, and offers insight into what approaches are needed moving forward to see an increase in animal-source food consumption.
