The Roll Cake, known in Brazilian Portuguese as Bolo de Rolo, is a typical dessert from the Pernambuco state, located in the northeast of Brazil. It’s the adaptation of the Portuguese Bride's Mattress cake, which is a rolled sponge cake filled with almonds. Upon arriving in Brazil, the Portuguese bakers changed the filling to the native guava fruit which Paulo brought to Canada when he immigrated to Toronto from Brazil in 2016.
