A small wooden board with a small knife, the kind bakers use to score bread. A small lamp with a long neck is angled over the counter where the flour sits.At the back of the shop, a doorway with a curtain. Beyond the curtain is the kitchen, where the bread is actually made. A long wooden table runs down the middle, the kind that has been scrubbed so many times the wood is almost silvery. On the table, a bowl with a cloth over it, and under the cloth, the dough is rising. A window is open a little, the way windows are left open at night.You walk over to the ovens. They are brick, the old kind, with iron doors closed. Inside one, a wire rack with a single loaf, the last of the day, cooling very slowly. The baker is in the corner, sitting on a small stool, with a small book in one hand and a cup of tea in the other. The baker turns a page.The baker tucks the last loaf into a small cloth bag, folds the apron, picks up the bag, the book, and the cup, and turns off the small lamp. The kitchen goes dark except for the dim warm glow of the closed oven doors.
