Hailing from Ireland, Dylan is a a former corporate lawyer who moved into the food and tech world to solve the problem he experienced dining out as a person with celiac. Dylan also chairs a committee for FARE (Food Allergy Research and Education) to support the food allergy community. He was also heavily involved in supporting the recent legislation in California mandating restaurant labeling on menus.
