Two weeks out from opening my very first restaurant, flood waters came right to the front door and stopped just short of the carpet. Years later, our POS system crashed one busy night and sent my 300 seat place into complete chaos. These were relatively minor occurrences, but when a major ice storm knocked out power for 3 critical weeks, my restaurant barely survived the loss of business.
