Sometimes we create unnecessary suffering, because we forget the perfection of divine timing; timing that doesn’t require pushing, pulling, or forcing into submission, timing that flows effortlessly and abundantly because it’s bigger than us. This timing is wise and generous and knows what we need, when we need it. Sometimes all we need to do is step aside in order to make way for the Universe to extend its magical touch. What am I reading?https://bookshop.org/shop/witchywomanwalkingA Lullaby for Witches by Hester FoxUnfuck Yourself  by Gary BishopWhat am I listening to on repeat?Never Here by Elastica What’s for dinner?Sweet Potato & White Bean Burgers Ingredients:2 cups mashed sweet potatoOlive oil (for cooking sweet potato)1-1.5 cups brown rice or other grain, quinoa or millet 1 cup canned white beans (rinsed and well drained)1/2 cup finely diced green onion1/2 cup panko bread crumbs2 1/2 tsp ground cumin1 tsp smoked paprika1/4 tsp each salt and pepper (to taste)1/4 tsp chipotle powder2 teaspoons Maple syrup for sweetness (optional)Plus, toppings: whatever you like!And good buns, teehee! InstructionsPreheat oven to 400 degrees F (204 C) and cut sweet potatoes in half. Rub with olive oil and place face down on a foil-lined baking sheet. Bake sweet potatoes until soft.While potatoes are baking, cook rice or other grain.Add beans to a mixing bowl and mash half of them for texture. Then add sweet potato and lightly mash, then 1 cup  green onion, breadcrumbs and spices. Mix to combine. Taste and adjust seasonings as needed. Add more rice or breadcrumbs if the mixture feels too wet. It should be very moist but moldable.Lightly grease a baking sheet.Make burger patties with your hands.  The thinner you press them, the faster they’ll cook. Bake burgers for a total 30-45 minutes, carefully flipping 20 minutes in to ensure even cooking. The longer you bake them the firmer and drier they will get.Ice Cream PieIngredients:half gallon favorite ice cream 1 (9 inch) pre-made cookie or graham cracker crustFavorite toppingsInstructions: Let ice cream thaw until slightly soft and scoop-able. Then gently spread a layer in the pie crust, approximately 1″ thick. Add in a light layer of toppings on top. Then add one more 1″ thick layer of ice cream, and add more toppings on top.  Freeze the pie until it is firm again, then slice and serve.Support the show
