Send us Fan MailAs we celebrate the upcoming 250th birthday of our country, Rich and Kim share their insights into the upcoming 250th birthday celebration events which seems to be designed for the wealthy and for those MAGAs who continue to believe this administration is working for them.   The United States was born to move forward the rights of the common man and to give everyone who comes to our country an opportunity to build a new life and experience true freedom and an opportunity to flourish.  Today that is in jeopardy.  Keep fighting - we need to be warriors for freedom and against oppression.  We cannot be silent!Five Ingredient Baked Salmon Bowl 1 ¼ lb salmon, cut into 4 equal pieces, skin on or off depending on preference1 large avocado, pitted and sliced thin1 small English Cucumber sliced thin½ cup Hidden Valley Green Goddess Ranch Condiment and Dressing plus one teaspoon for marinade3 to 4 cups white rice Olive oil, salt and pepper – I also added a teaspoon of garlic juice to marinade.Cooking instructionsIn a medium bowl, toss together the salmon pieces with 2 tablespoons olive oil, one teaspoon of garlic juice, one teaspoon of ranch dressing, salt and pepper (to taste). Let it rest in the marinade for 10 minutes.Turn oven to 350 degrees and cover the bottom of a cookie sheet with olive oil (lightly).Add salmon pieces to cookie sheet and bake for 5 minutes, flip the salmon and bake another 5 minutes.  The salmon cooks quickly so may take less or more time.To assemble the bowls, divide rice between four bowls, using about ¾–1 cup for each. Place the salmon pieces on place on top of the rice in one section, as well as ¼ of the sliced avocado. Toss the cucumbers in the Green Goddess ranch and arrange on top of the rice.  Drizzle with extra dressing as desired and serve warm.
