A los echalotes también se los conoce con el nombre de chalotas o escalonias. Son originarios de Asia central y su nombre procede de Ascalón, la ciudad de Israel donde tradicionalmente se los cultivaba. Forman parte de la familia de las liliáceas, igual que la cebolla, el ajo o el puerro. Tienen forma aovada y poseen un sabor que está entre el ajo y la cebolla, pero más dulce y suave. No es tan intenso como el ajo y es más aromático y delicado que la cebolla. Son muy apreciados en la cocina europea, donde se los emplea principalmente como condimento, aunque su uso no es tan común en la Argentina, viene creciendo su consumo en los últimos años. El mayor país productor y consumidor de echalotes es Francia, aunque en la actualidad se los cultiva en casi todo el mundo. Existen diferentes variedades de echalote, pero el común es parecido a un diente de ajo grande, con una capa exterior rojiza y la inmediatamente interior de tono violáceo. Puede haber diferencias en el color de la piel externa, que puede ir de un rojizo a un blanco, pasando por un gris. Los echalotes son muy aromáticos, por eso son muy apreciados en la cocina. Pueden consumirse tanto crudos como cocidos y se los emplea en la elaboración de salsas y vinagretas, puede acompañar carnes y pastas. Crudo en ensaladas va aportar un intenso aroma y ligero sabor picante. Si se los rehoga, es conveniente que no lleguen a dorarse, ya que su sabor se tornaría amargo, por eso se recomienda hacerlo a fuego bajo. Es conveniente conservarlos en lugares frescos y secos y, preferiblemente, oscuros para que duren varias semanas. No hay que guardarlos en bolsas de plástico ya que necesitan aire. Una vez pelados, pero no cortados, se los puede guardar en la heladera, en un recipiente hermético, por una semana. Entre los beneficios de los echalotes, para una alimentación saludable, se destaca su aporte en vitamina A, B, C y E, ayudan a disminuir el colesterol y a mejorar la circulación, siempre que se los consuma con regularidad. Contienen pocas calorías y un aporte importante de antioxidantes, debido a la alta concentración de flavonoides.
