Ensaladas: también para el invierno Las ensaladas no son siempre platos fríos para comer en el verano. Aunque, en general, se asocian con los días calurosos, tenemos muchas alternativas interesantes para ensaladas en esta época. Recordemos que las verduras crudas son una parte importante de una dieta equilibrada y las ensaladas son una de las mejores formas de incorporarlas. Entonces, ¿qué hacemos? Preparamos ensaladas en invierno, combinando hojas frescas y alimentos cocinados, haciendo un plato templado que puede acompañar a cualquier comida y sea atractivo para esta época. Podemos combinar diferentes grupos de ingredientes. Entre los ingredientes fríos tenemos como fundamentales a las hortalizas de hojas verdes de temporada y las que tenemos disponibles todo el año: lechugas de todo tipo, apio, rúcula, hojas de espinaca y porque no de remolacha. También podemos considerar entre los frescos a los brotes, entre ellos: de soja, de alfalfa, de lentejas. Aportan un extra de sabor y textura y van bien con platos tanto fríos como calientes. Entre los Ingredientes templados podemos aprovechar las sobras de otros platos que vienen bien para estos casos, puede ser arroz, quínoa, u otros cereales, pastas y legumbres cocidas. También podemos utilizar papas, zanahorias, paltas, batatas, coliflor y calabaza. Las hortalizas en general quedan muy bien para las ensaladas, así que, si tenemos alguna ya cocida, asada o al vapor, tenemos que aprovecharla. Hay Ingredientes extras que pueden andar muy buen para estos casos, como son las nueces, almendras, semillas varias, también espárragos, champiñones, paltas, tomates cherry, aceitunas y huevo duro, entre otros. Con todas estas alternativas, solamente queda utilizar nuestra imaginación, porque, también en invierno, podeos armar una buena ensalada, rica y nutritiva. Prior to studying medicine, she pursued classical Islamic studies in Damascus, Syria, and holds certifications (ijaza) in the Qur’an, Islamic Law, and other branches of the Islamic Sciences. Mohammad Qutub Muslim Central Dr. Mohammad Qutub is an Islamic scholar with several decades of experience as a teacher and orator. He completed his Master’s and PhD degrees in Uṣūl al-Dīn and Comparative Religion at the International Islamic University Malaysia (IIUM), and has several Ijāzahs (licenses) and certificates in Qur’an, Hadith, etc. He has spoken internationally in the Middle East, the U.S., and Southeast Asia and regularly holds intensive seminars and university lectures.
