I call this the fermentation period. What is a fermentation period? How to identify it? How to know if you are just procrastinating or this is a time to wait to launch?  Fermentation is a process used to produce wine, beer, yogurt and other products. Here's the chemical process that occurs during fermentation. If you taste the wine before it is done fermenting it will not be ready, it won’t taste right.
