Hey Pickles!We're one year old!!! That's right we've been doing this crazy vegan podcast thing for a whole year! We're so glad that you've been here with us as we've grown and learned along the way!We also had a big vegan birthday bash for Sam this past weekend. We'll fill you in on all the vegan food that we made for the party!We made a recipe for our Vegan Cookbook Challenge with a bit of a twist.This week's recipe was an homage to Christine's late Mother, Joyce. You'll hear why she honored her Mom with this particular recipe, and we'll share the recipe below! It's a recipe by Italian Chef, Lidia Bastianich. We have many of Lidia's cookbooks, however this recipe was not in any of them! We're pretty sure this recipe is only from one of her many cooking shows. We found it on a food forum!We created a list of some of the hidden animal ingredients that you should watch out for when you're doing your grocery shopping, and we let you know in which foods you might find them.We recommend the book Animal Ingredients A to Z by EG Smith Collective , and Carol Adams. Here are the links:Join Our Patreon! https://www.patreon.com/CompassionandcucumbersAnimal Ingredients A to Z *paid link https://amzn.to/3eYVaTURandy Rainbow https://www.youtube.com/c/RandyRainbowOfficialRandy's Autobiography *paid link https://amzn.to/3duH9NoAVA Summit. https://avasummit.comThis Week's Recipe Lidia's Potato, Onion, Cherry Tomato Bake8 large yellow or russet potatoes sliced thin1 large red onion sliced thin1 C cherry tomatoes sliced in half1/2 C Vegan Parmesan cheese1/4 C olive oil Dried OreganoDried ParsleyGarlic Powderin a large mixing bowl, combine the potatoes and onions add 1 Tbsp oregano, 1 Tbsp parsley, 1/2 Tbsp garlic powder, half of the olive oil, salt & pepper to taste. Mix wellTransfer to a baking dishIn the same mixing bowl add the sliced cherry tomatoes, the rest of the olive oil, salt & peppermix well, and add to the top pf the potatoes. sprinkle vegan parm on top. Bake at 450F for at least an hour or until the potatoes are tender. You could par cook the potatoes first to shorten the cooking time. If you do, bake at 425F.Send us a voicemail or a text!
