Scott Grzybek of Zukay Live Foods makes a visit to The Appropriate Omnivore. Scott talks about how reading Nourishing Traditions and learning about the Weston A. Price Foundation led him to create Zukay Foods. He began fermenting different foods and realized that while there were many great ferments on the market, nobody was making beet kvass. Scott found a great in with kvass and in addition to making it with beets, Zukay offers many other flavors of kvass. He also talks about how he find his sources for local and organic ingredients as well as using fluoride free water.
