Sotiris tells the stories of how each of the different types of olives go through the traditional fermentation process. In addition to being truly fermented, the olives are also grown using regenerative agriculture. More recently Big Picture Foods has expanded into regenerative and fermented peppers and capers, two foods also long overdue.
