Before founding the farm, Paulette built her career in horticulture and the wine industry, while Eberhard earned acclaim as a chef in Europe and at some of New York’s most celebrated restaurants. Their paths first crossed when Paulette was selling wine to one of Eberhard’s restaurants, sparking both a personal and professional partnership that would soon lead them to purchase farmland here on the East End.What began as a way to supply Eberhard’s restaurants with the freshest produce has since grown into one of the region’s most respected farming operations, known for its specialty greens and herbs, and trusted by top chefs and retailers alike. In our conversation, we’ll talk about their journeys before farming, the challenges and opportunities of growing produce, the evolution of the farm-to-table movement, and their hopes for the future of agriculture and the North Fork community.
