Thank you for joining us for another episode of the Low Carb MD Podcast. Dr. Andrew Mente received his doctoral degree in Epidemiology from the University of Toronto. He completed post-doctoral training in cardiovascular epidemiology at McMaster University in Hamilton, Canada, and is currently an Associate Professor in Health Research Methods, Evidence, and Impact at the Population Health Research Institute, McMaster University. Dr. Mente has studied the role of dietary sodium and cardiovascular diseases in the Prospective Urban Rural Epidemiology (PURE) study—a study whose findings call into question the dietary guidelines around fat, carbohydrates and salt. In this conversation, Drs. Tro and Andrew talk about the impact of dietary salt intake and mortality, the methods used to study how much sodium people are consuming, the history of research on sodium intake and its relation to mortality, the optimal sodium intake range for humans, the history, methods, and findings of the PURE study, the risk to human health that arises from eating processed carbohydrates, the interesting issue of 'healthy user bias' in epidemiological studies, dairy intakes and health outcomes, and red meat and health outcomes.
