This week we have a ribs up bone down situation on our hands. We brought on Memphis Mac to talk all things BBQ and the art of smoking. Memphis Mac is a local smokehouse about to finalize the opening of their second location in Millennial Park. The owner, Carlos, was not always a pit master smoking the best pieces of meat in town. For about 20 years he was a professor teaching ISDS, yes, we thought the same thing, how do you go from ISDS to smoking meat. The answer for Carlos was simple, smoking meat was a passion of his. After turning in his cap and gown he grabbed an apron and some wood, opening a location right at the entrance to the Exxon plant here in Baton Rouge and the rest is history. Being a numbers guy, he spends most of his time prepping for the week and calculating based off of statistics just how much meat he needs to prep fo the upcoming days.
