We've been on a bit of a run lately with bringing back past guests who are well overdue for a visit, so this week we're hanging with Founder Stéphane Dubois and Head Brewer Benoit Brame of Toronto's Bandit Brewery. We last kicked it with Bandit back in the summer of 2018, and a clearly lot has changed with the only brewery in Roncesvalles.  With co-host Notion (of both Illnote Studios and BAOS's very own photographer and audio engineer) joining Cee, they sat down with Stéphane and Benoit (coming live from the brewery) to chat about their large barrel program expansion, how Benoit joined the brewery, whether their French heritage influenced their beers and a lot more. We crushed three of their IPAs (Cloud, Hive and Ned), along with Elements #7 (wild ale with cherries), Longwave 20.1 (bourbon barrel-aged barleywine) and Sway (imperial stout with chocolate and raspberries).
